Perfect Homemade Brunch

This is the perfect healthy brunch to make for yourself or for a loved one! It tastes like it would be at a restaurant, is made with simple ingredients and is so easy!

Ingredients for 1 large serving

2 tbsp butter of your choice

3 organic eggs

1 tbsp minced garlic

2 slices of onion diced up

1 tomato

1 huge handful of spinach

1/4 cup Parmesan

Start by melting 1 tbsp butter in a skillet

Add diced onions and garlic

Sauté until golden brown

Add diced tomatoes, stir

Add spinach, stir until the spinach wilts

Remove from heat

In a skillet melt the other tbsp of butter

Add 3 eggs and scramble

Once the eggs are cooked add the veggie mixture and stir to combine

Plate the veggie omelette and top with Parmesan and cracked black pepper.

I served mine with toasted sourdough.

So delicious!
