Anti Inflammatory Salad

For me to want to eat a salad it needs to be flavorful and this cucumber salad is amazing! I could eat it everyday. It’s easy to make and add to your recipe rotation.


1 cucumber

5 grape tomatoes

chopped red onion, add your desired amount.

4 basil leaves

1/3 lemon

Feta cheese, add your desired amount.

Glaze from Trader Joe’s, it’s a balsamic glaze you can substitute for your preferred dressing.


Wash all produce

Peel and chop cucumber add to bowl

I quarter the grape tomatoes add them to the bowl

Dice the red onion add to the bowl

Cut the lemon and squeeze over the salad

Roll the basil leaves together then chop. Add to the bowl

Toss the salad in the lemon juice.

Top with feta and a drizzle of Balsamic Glaze

This is a quick meal and you can double or triple it if you’re making it for a group.
