Easy Weekday Chili

Ingredients

  • 1/2 onion I used red
  • 3 green onions
  • 1 can of corn
  • 1 can diced tomatoes
  • 1 can of black beans
  • 1 can of kidney beans
  • 1 bunch of chopped cilantro
  • 1 packet of chili seasoning I use the Mild Chili seasoning from Simple Truth
  • 1 tbsp oil
  • Garlic powder
  • Salt

Dice the onion and green onions add oil and onion to a large pot. Add the chili seasoning to the onions and oil, add the can of tomatoes. Pour the corn and beans into a strainer and rinse then add to the pot. Add garlic powder and salt, stir. Add water till just at the top of the mixture. Cover and let it simmer for 30 minutes, add chopped cilantro and stir. Turn the heat down to low for 15 Minutes. Top with whatever you prefer; cheese, avocado, cilantro, lime.
